Square Pie started properly in summer 2001 when a recently unemployed Martin Dewey dreamt up the company’s quadrangular name. As a food lover, Martin had long been frustrated at the lack of quality pies available in London (arguably the global home of pie and mash). After finding a chef willing to accommodate a flurry of pastry-encased ideas, Martin remortgaged his flat and then set about trying to create the UK’s first ever gourmet pie company.
One of the first lessons learnt was, as with most cooking, making a great pie is not rocket science. Square Pie’s philosophy was the same then as it is now – always use the very best fresh ingredients available and work with chefs who know what they’re doing and care about the results. Basically, don’t cut corners.
Square Pie’s first retail outlet – a stall in Spitalfields Market – opened in November 2001 selling a grand total of seven pies on their first day of trading. Word of mouth saw the company’s reputation – and the stall’s output - grow quickly. Through contacts in the music world, Martin began selling pies in London venues like the Social as well as at outdoor festivals. For many, their Glastonbury pie stall has become as much a go-to destination as the Pyramid Stage or the stone circle.
In the twelve years since Square Pie started, the company has opened several shops (including both London Westfield malls, Canary Wharf and Bluewater), supplied major sporting venues such as Twickenham Stadium and Lord’s Cricket Ground) and produced over one hundred and twenty different varieties of pie - a few of favourites from over the years include the Senegalese Chicken Yasser from the Pie World Cup and the Humble Pie of kangaroo and Aussie merlot produced after the 2003 Rugby World Cup.
